How perfect is that - the peach halves act as their own serving container! It's like a personal pie without the crust (which makes it totally healthy, right?), ready in 25 minutes and without all the work of slicing peaches. And they really are super easy: just mix up some crumble, stuff the halves, bake, and serve warm with some whipped cream of course.
I thought the amount of topping the recipe produces would actually be perfect for filling four halves, so next time we're each getting our own peach. (Also, I skipped the recipe's coconut and almonds since I don't care for them; the first time I didn't use oats either because I was out. It still tasted amazing and worked well.) And when we had a dinner guest, this was a perfect dessert because I could assemble ahead of time and just pop them in the oven before we started eating dinner, and they were ready immediately after.

ReplyDeletepeaches aren't in "back home" in the the mitten ... so we're still eating strawberry pie. most recently for brekkie ... will love these when peaches come, if they come.
