Verdict: new recipe success. Even if it does stress me out a little to be making a new recipe when I'm having guests (lesson learned). Not too suprised we liked it as we do love a quinoa bowl meal - see below for other excellent ones I've pinned and done - but what really sold me on trying this recipe was the "garlic mojo sauce." It was a little labor-intensive, but soooo good. Most definitely saved the rest to see what else I can pour it over. No surprise, then, that I noticed at the bottom of the post that part of the recipe was adapted by my favorite Rick Bayless.
A couple of changes I did to this recipe worked well: feta instead of cojita was tasty, and sauteeing/roasting the veggies in the oven worked just as well as grilling (better, in my case, since we have a tiny grill and can't fit the shrimp skewers and veggies at the same time). The only issue was my quinoa... the Trader Joe's frozen packs that normally work so well and give me perfectly cooked quinoa in 3-minutes just failed this time around. Not sure whether to blame then or my unfamiliar microwave... hazards of new kitchen cooking, I guess.

Thanks for the shout out. This sounds so yummy. I'm trying out a new diet and have been looking for recipes like this that would fit. This sounds perfect. I like the idea of using feta instead. I don't know if I've even tried cojita or seen it in stores. I've been meaning to try that TJ quinoa.
ReplyDeleteI'm like you, kitchen is almost always the first to unpack and get organized during a move. We're moving mid-September and unfortunately the kitchen needs some work done first so I'll have to hold off for a couple weeks before I can get it unpacked. Talk about stress;) Hope you're enjoying the new place!

These look delicious except that I don't eat shrimp... but you also had me on that garlic mojo sauce. I'm thinking a simple chicken for shrimp substitute (or even tofu) would work well with that sauce! Whenever I've moved the first thing I've always done is set up my bed so it's ready as soon as I need to crash. Then the kitchen because sustenance is a must. Congrats on the move, can't wait to see what you do with the new space!! PS thanks for featuring me :-) PPS it took me 4 times before I got that smiley face right...
ReplyDeleteOoh this is one that I MUST make. I have some shrimp in the freezer that I need to use, and Aaron is a shrimp lover and a garlic lover (I like both too, but not nearly as enthusiastically) so these would make him very happy.
ReplyDeleteAnd yay for your kitchen coming together! You are SO right about a functional kitchen making a functional life...I'm dreading having to pack ours up (whenever this house selling business actually does happen... I swear, everything takes forever to get ready!).
I love that you said "when the kitchen is functional, life feels pretty functional". I said almost those exact words last night to Caleb as I cleaned the dishes! Too funny. I LOVE cooking with quinoa. It's so tasty! This looks good! Enjoy the new place!!!
