pin to present: chili lime chicken skewers

I've been trying to earn my keep on our summer weekends at my parents' cottage by planning/making a dinner each time. The least I can do really, except that I have quickly run through my ideas of simple, summery meals that are easy to scale up for a bigger group. Perfect opportunity to peruse my Pinterest board and actually try out one of those "oh, that sounds good!" recipes that I've pinned and put off... leading to what just might be a new summer go-to: chili lime chicken skewers with yogurt dip.

This recipe fits the bill for summer: light and fresh tasting, quick and easy to throw together after the beach with ingredients I pretty much always have on hand (including the chili garlic paste, thanks to this favorite recipe from last summer). And it fits another bill: Peter's love of a sauce. This one is super tasty, and we're scheming what other meals we can incorporate it into... Peter covered his beans with them and was quite pleased.

What's on your go-to summer recipe list? I recommend this one, but now I need more ideas to keep the parents excited about us crashing their place every weekend :)

  1. Anything with a yogurt sauce and I'm in! (In fact--that was my lunch today, leftover Chicken Shawarma in a pita with yogurt sauce - http://www.skinnytaste.com/shawarma-spiced-grilled-chicken-with-garlic-yogurt/ - really good!) This looks delicious, and I love the combo of spicy chicken and cool yogurt. I'm going to make this one for sure, thanks for sharing! It's funny though, my husband is NOT a fan of yogurt sauce, which I think is crazy, but that means more for me!
