making lately: chocolate chip cookie cake

At my brother's wedding in June they had the most amazing 3-layer frosted chocolate chip cookie cake from a local bakery... my new sister-in-law fits RIGHT in with the cookie loving people in this family. My dad was pining for his own version of it for his birthday cake, and so I decided to start experimenting with some recipes to see if I could replicate anything close to it.


While I would hesitate to compare anything I make to something from the Cakabakery, I think this one that I based on the chocolate chip cookie cake recipe from Handle the Heat is insanely delicious. Chewy edges, soft in the middle is already a recipe for something I'm going to love, but then the buttercream on top really is the proverbial cherry. I decided to use jumbo chocolate chips to make it even more decadent, and swap out the suggested sprinkles on top for some mini chocolate chips to keep the theme going.
