
To me a "go-to" recipe is one that is pretty quick and easy, enough that after one or two attempts I can cook it without really needing to look at a recipe (which means that I don't get stressed out while cooking!), incorporates ingredients that we'd often have on hand anyway so I can go to it in a pinch, and of course is liked by everyone in the house. Buddha bowls had already turned into such a go-to in the latter parts of 2019, so I was looking for something that is that easily customizable and easy and delicious... and where else to go but tacos?!
We actually already had one in the rotation, these cauliflower and chickpea tacos. Highly recommend this recipe, but with the note that they're even better as tostadas. Just brush your corn tortillas with oil and bake at 375 until they're a bit crispy. Then you top the crisped tortillas with guacamole and the cauliflower/chickpea mix (don't forget the crema from the recipe too - so good!), and you get all the delicious taste with an added contrast of crunchy + soft texture to make it even better.
Now I'm on a mission to add another type of veggie taco to the go-to list. We've tried these easy black bean & sweet potato tacos, which Peter and I loved but Hendrik was so-so on - not sure why, since he does like all of these ingredients usually, so I may just need to try again, but I'm also looking for a couple of other varieties of veggie tacos to try. These quinoa black bean tacos look good and hearty, plus we love a lime crema. And these Asian chickpea tacos just look beautiful for all of the color, plus they'd be a great way to change up the flavors a bit.
