choosing: between a couple of fall 2020 school enrollment options that are supposed to start September 1 and that I hate both of. Enough said. Ugh, pandemic world.
consuming: so much Greek salad, thanks to the cucumbers and tomatoes that are going gangbusters in our back yard (thanks to Peter's gardening efforts). I keep it simple: just dice them up, add some crumbled feta and a dash of Garlic Expressions dressing, and it is the best addition to a summer lunch (if you want an actual recipe, the dressing on this one looks similar). Not even close to getting sick of having it daily.
enjoying: a late afternoon pick-me-up of coconut La Croix + lime juice, when Hendrik and I reach the blah "is it dinner time yet?" part of the day. Normally I'm not a huge coconut fan, but the addition of lime juice makes this taste like a refreshing cocktail that is not frowned upon at any time of day (this mocktail recipe would make it even fancier, for a true happy hour substitute!)
ordering: just a little bit of online retail therapy, such as these items and especially loving afternoon walks in these comfy + cute shoes that arrived on my doorstep earlier this summer. (And also receiving a case-in-point of why retail therapy isn't really the answer to all of our problems and heart's desires, when this top + skirt combo went so spectacularly wrong when it arrived and I excitedly opened the package and tried it on. Back it goes!)
remembering: little bitty Hendrik. Lately a weird highlight of my day is checking my Instagram "on this day" memories to see what photo I might have posted, and I've seen some pregnancy and baby Hendrik stuff to just melt my heart. Of course, some of his serious big-kid stuff in the past few weeks, like losing a couple more teeth and learning how to ride a two-wheeler, are giving me nostalgia for the little version of him all on their own. But then add in the Instagram memories and photos we get of my nephew using some of Hendrik's old baby stuff, and whooo, I am steeped in it.
Hope all is well with you as we kick off August, and if you're dealing with the back-to-school decisions and transitions it all goes smoothly. Not sure I have any idea what our status around here will be, come September 2 when the next linkup rolls around, but I am glad that this little community is here to talk about it with!
